Instructions

Roast the Vermicelli:

  • Heat ghee in a heavy-bottomed pan on medium heat.
  • Add the vermicelli and roast until it turns golden brown, stirring constantly to avoid burning. Remove and set aside.

Fry the Nuts and Raisins:

  • In the same pan, add cashews and fry until golden. Add raisins and sauté until they puff up. Remove and set aside for garnishing.

Cook the Vermicelli:

  • Pour milk (and water, if using) into the pan and bring to a boil.
  • Add the roasted vermicelli to the boiling milk. Stir and cook on low-medium heat until the vermicelli is soft and the milk thickens slightly (about 8-10 minutes).

Sweeten and Flavor:

  • Add SweetSpot and mix well. Let it simmer for 2-3 minutes to combine.
  • Stir in cardamom powder and saffron milk (if using).

Garnish and Serve:

  • Add the fried cashews and raisins to the payasam, reserving some for garnish.
  • Serve warm or chilled, garnished with the reserved nuts and raisins.
