Here’s a simple Junnu/Khova (Colostrum Milk Pudding) recipe using SweetSpot (a prebiotic sugar replacer):
Recipe
- 2 cups colostrum milk (first-day cow or buffalo milk) or a mix of regular milk and milk powder
- 1/2 cup SweetSpot (adjust to taste)
- 1/4 tsp cardamom powder
- A pinch of black pepper powder (optional)
- A few strands of saffron (optional)
- 1-2 tbsp chopped nuts (almonds, pistachios) for garnish
Instructions
Prepare the Milk Mixture:
- If using regular milk, mix 2 cups of full-fat milk with 1/4 cup milk powder to mimic the texture of colostrum milk.
- In a mixing bowl, combine colostrum milk (or prepared milk), SweetSpot, cardamom powder, black pepper powder (if using), and saffron strands. Whisk well to dissolve everything.
Pour and Steam:
- our the mixture into a heat-safe, greased bowl or dish.
- Place the bowl in a steamer or pressure cooker without the whistle and steam for 25-30 minutes on medium heat until the mixture sets.
- To check, insert a knife or toothpick into the center. If it comes out clean, the pudding is done.
Cool and Serve:
- Allow the pudding to cool completely.
- Garnish with chopped nuts before serving.
- Serve chilled or at room temperature as a dessert or snack.
