Sweet Spot® Eggless Cake

Recipe

  • 1 1/2 cups all-purpose flour (maida)
  • 1 cup SweetSpot (adjust to taste)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup oil (neutral flavor like sunflower or canola)
  • 1 cup milk (at room temperature)
  • 1 tsp vanilla extract
  • 1 tsp vinegar or lemon juice

Instructions

Preheat the Oven

  • Preheat your oven to 180°C (350°F).
  • Grease an 8-inch round cake pan and line it with parchment paper.

Mix the Dry Ingredients

  • In a large bowl, sift together flour, baking powder, baking soda, and salt.

Mix the Wet Ingredients

  • In another bowl, whisk together milk, SweetSpot, oil, vanilla extract, and vinegar until well combined.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula. Do not overmix; stir until just combined and smooth.

Pour into the Cake Pan

  • Pour the batter into the prepared cake pan and tap it gently to remove air bubbles.

Bake the Cake:

  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.

Serve

  • Slice and serve the cake as is, or frost it with whipped cream, chocolate ganache, or your favorite icing.
